When I was on World, I posted transactions to subledgers with a 55 product code and I believe it was a type "S" to validate against a 55/SL table. Does One-World allow for this setup so that I can set up subledger verification without adding records to my address book or adding work orders?

Yes you can. On the Knowledge Garden document OFN-99-0148 Setting Up Structered Subledgers explains how you can set-up subledger type S and have it validated against a UDC or more UDCs of your choice.
