You have 2 other options.

A cross-hardware upgrade which is very possible but if you are not strong in
the details of each upgrade component (i.e. Spec Merge, Table Conversions,
Additional Tasks, etc) and what each one is supposed to do and how to verify
it, you will probably not have much success.

Another option to take your new hardware to an isolated network and bring the
new servers up with the same names as your current DS and ES.
The run thru the CD installations of the DS and ES and then restore the JDE
files and folders and SQL Server DBs from the production hardware to the new
hardware. Test to ensure it's identically functional and then proceed with
the upgrade on the new hardware. I've never gone this route but I believe
it's feasible.
