When you are assembling a full package build for 8.11, do you have to browse to pick the correct FEATURE. If so, when do you do so? I cannot seem to find anyting on the Oracle's knowledge garden.

It all depends on the answer to the two questions below:-
1) Have you or anyone else in your company created any features that affect wither the E811\System directory (on the client) OR the JDE.INI file on the client - If not then NO.
2) Do you have any developers working on your system? If so then you should have created a Web Development Client feature to deploy to them. If the package is for DV811 then Yes you do need to add that feature, if the package is for any other non development environment then No.

The general rule of building a full package is that you can select all of the defaults, since you are recompiling the whole tamalie.
