Web Server configuration

We are currently thinking of revamping our infrastructure. We would like to focus more on the web side of OneWorld Xe (currently on SP21, Update 7) in the future. I was wondering ... does anyone have any metrics that they could provide me as to the performance (as noticed by the end users) of a single, dual-CPU server as compared to two single-CPU servers acting as the web server? We're trying to decide as to which configuration to go.
