We have an issue where the route for an item has been deleted.

Standard way, no possibility that's reason the Master data related setup applications should be secured one to specific Security Role.
If the Audit control is enabled in your instance (CFR) then this can be audited in Table names as A****. This is additional setup and configuration.

If you have activated the PO "Interp" of your P3003 then should have the information under F3003Z1.
